I wanted to read out the weight on a scales with an arduino.
As far as I could find out, it is quite complicated to get information from a LCD-connection and to get information directly from the sensors, I would need an amplifier...
Is there any other easy(er) way to get the information directly from the board?

Some scales have serial outputs (that one probably does not). Google may find them for you.
Look at the HX711. It's a chip that can be connected to your load cell(s) and be interfaced with Arduino over SPI.

Is it possible to attach two (or more) HX711 to one Arduino UNO?
Because it has only one set of pins for the SPI...

Not easily, because there is no Chip Select (CS or SS) input on the HX711 chip.
In that case, what about software SPI? I have no direct experience of it but it may be worth investigating...
