I am needing more than 15 analogue in headers. How would I go about using the digital pins to get over this problem? All I know is that I need a A/C but thats about it!

You don't.
You would fit a multiplexer chip on the front end of your existing analogue inputs, like in this project:-

I did see that but its in processing and had a look thought it and cant get my head around it.

No it's not it is for the arduino.
It is the old version 0023 of the arduino so it has a .pde extension but it is not processing.
Strange :S It opened in processing but errored when I tried to open it in Arduino.

I have just downloaded the code from the web site, unziped it and then opened it from within the Arduino. I get no errors, what does it say for you?
I think it was a corrupted file when I downloaded the zip. Re downloaded it and its opened in it. Time to work out how it works... I may be back. :~
