recently i bought a LCD and when I hooked up all the wires I ran the hello world program and at first it kinda worked. but then if I moved the display to much it would glitch up and show random numbers and letters that would change everytime

Check your connections. Loose contacts often cause this kind of jittery behavior
We already know that the connections are bad.
The OP figured it out when he wrote "I thought it was because I didn't solder the headers in".
We just don't know if he has corrected the problem because he has not reported back to us.
