As above , has anyone tried loading new programs into Arduinos over a wireless link like these.

Theoretically, it should work, unless the latency of the wireless link is too long.

Likewise, has anyone been able to do the same thing with NRF24l01s.
I suspect this is a much tougher ask due to these devices being SPI.

Not exactly what you was looking for but the Moteino can receive wireless updates then program its self from an SPI flash chip (see here).
