What a weird setup.....

My phone wont let me view the 2nd file you posted, but two positives and a resistor...

From the PDF:

The LL series Liquid Level Sensor uses a optoschmitt trigger which provides a digital output that indicates the presence or absence of liquid. These components require user supplied external circuit protection.

As a guess, one of the +5V leads powers an LED, and needs a current limiting resistor, and the other powers the optical receiver.

Sounds right. It is almost certainly an open-collector output and needs a pull-up such as the internal pull-up of the Arduino.
