If it's the Sparkfun Sound Detector there's a little blob of solder marked SJ6... use a sucker or wick to remove it. It's covered in the docs here...
Hope this helps... just happen to be working with one right now.
Generally (but not always) LEDs on such boards are fed with a register. If so, it's usually safe to simply short the LED with a little soldered wire.
Or you can get a little pot of black humbrol modellers enamel paint and cover it.
