Help! Suggestions for creating abstract colours from data via Arduino

Hello! I'm an artist and an absolute basic beginner to Arduino, and I would really appreciate any suggestions people have for my project!

Basically, I'm using this: How to Hack Toy EEGs | Frontier Nerds to interpret brain activity. The code I currently have is located here:

which can be displayed graphically with GitHub - kitschpatrol/BrainGrapher: Processing-based visualizer for NeuroSky EEG brainwave data output from the Arduino Brain library.

I'm interested in taking the information from the headset and having it output different colours, possibly with motion, but with a less graphic/scientific expression (the final results will be photographs)

Any ideas/suggestions/directions to head would be really helpful, I'm trying to learn as much as I can but help from those more experienced then me would be fantastic!
