Highly sensitive moist sensor

Hi I'm looking for a highly sensitive moist sensor. I need it to be able to detect one drop, a full glass of water and anything in between.

How is it detecting it? Measuring? Or just a "is there water or isn't there water" sensor?

It sounds like you want a water sensor rather than a moisture sensor. From a sensors point of view it doesn’t matter what size the contiguous body of water is only that it is of sufficient size to link two electrodes. To detect a smaller drop of water you just need those electrodes closer together. The same sensor will detect a drop or an ocean in exactly the same way and will not see the difference.

If you want to detect water on a surface and you don’t know where that drop might be, then you need a matrix of +ve and -ve electrodes spaced so that wherever the drop is it will cover at least one of each electrode

All very much dependent on your actual requirements which you didn’t state as there are more than one ways to skin a cat
