How do I get a Project Hub taken down?

It's nonsense.

Best case scenario would be to work with the project author to either resolve the issues it might have or remove it voluntarily if it's irredeemable.

I do sometimes see projects with critical issues reported in the comments section that have had no response even after a long time, and so have likely been abandoned by the author. In this case, I think the best approach would be to submit a report via Arduino's contact form:

That will bring the issue to the attention of the people who are able to do something about it and create a ticket in the support system that allows the issue to be tracked and you to get updates on its progress.

I was able to do this with another project that was fatally flawed: Error in the code - Programming Questions - Arduino Forum in this case, the situation was a bit different because the issue had already been reported in the comments and a year had passed without it being resolved. Since I felt that the author had been given more than enough time to fix it and the project had no value with the essential code missing. I went straight to requesting its removal.
