How do I wire the IO ??

This may seem simple but I do not find anything offered at Radio Shack to actually wire the IO on the Arduino Mega. I want my project to look professional and not just have little wires stuffed into the female headers. All the Arduino has are female headers, is there a recommended source for pre wired male header pin assemblies that fit the Arduino boards? If I use an Ethernet Shield that has male pins, do the pins come through far enough to use a wire wrapping tool and kynar wire?

If you've already invested in a shield for the ethernet, it most likely has female headers on top replicating the Arduino and passing the signals through. One common and neat way to access the IO pins is to add a prototyping shield on top of the stack, plugging into those headers. Here are some examples:
This one from Freetronics
This one from Sparkfun
These on eBay (be aware some may not suit mega, but the sellers don't always do great with translation)

While often these might be used with a breadboard, there's an area on each where you can solder a more permanent circuit, and wire to pads which have the IO and power exposed for soldering to. Alternatively you can use regular hook-up wire or what is sometimes called 'breadboard jumper wire' if your installation is going to be less permanent, though I don't think that will achieve the neatness you're apparently looking for.

$4 - $5 for a uno/mega prototyping PCB is not bad. They don't come with headers, but you can use regular male headers.

My local Radio Shack has this shield - you can get one today, Sunday. It should have
some male headers in the package too.
