Why are they so important and why are they on Chips such as the 74HC595? I am having a lot of trouble understanding this.
The 74HC595 data sheet (or that for other relevant ICs) clearly explains the purpose and functioning of those pins.

How would you get data into or out of a shift register without a data pin?!?
How would you tell the shift register that it is time to shift in or shift out data without a clock pin?!?
In a serial-in/parallel-out or parallel-in/serial-out shift register, how would you tell the register that it is time to move the data between the serial and parallel registers without a latch pin?!?
