This depends on if the shields are stackable and what IO pins are used.

Different shields may use fixed pins so if you stack two of them, you cannot run two shields with the same outputs.

Depends on the shield.

A prototyping shield allows any pin to be used.

Some such as the Ethernet shield I have uses fixed pins.

You can use Serial-in, Serial-out and Sync-clock many times. So number of shields depends on the other pins used , as long as no pin is used twice then it will work.
