Do you have the usual set of gyro- and acceleration sensors on board? If yes, look for PID controller feedback mechanism on Google and implement it. There are even a few samples out there how to do that with the Arduino. Once you have the system in place, you just need to tune the parameters of the PID controller to get the desired results.
