I've bought this oven probe
I want to read the temperature from arduino, to do that I need an amplifier but I've found that I also need to know which kind of probe it is. There is no written anywhere if it is a k, j, o something else.
how can I know it?

For an oven, I would guess at it being k type.
Why buy a sensor without knowing what type it was?

It might not even be a thermocouple.
How many connections are there to the probe, and what is the resistance between them?
Weedpharma: because it was the only one that could suite my need ( waterproof sensors for food use ) and honestly I didn't know there where so much kind...
Jremington: the probe exit with a mono jack, I'm going to check tomorrow the resistance. Can the resistance give me informations about the kind of it?

If a thermocouple, the resistance will be very small. If a thermistor, the resistance will be large and change with temperature.
If it is an LM35 then it will test as a diode.
