Do you mean to intercept the data going from the chip to the LCD? Difficult, I would think. Can you connect to the analog input of the chip? What is the voltage range of the analog input?

I do not think you can unless you interface directly to the display. It appears from the data sheet it is a is a 3 and a half A / D conversion circuit with direct drive LCD function simply stated a digital voltmeter on a chip.
