How to store IP address into a string?

I would like to start off by saying I have been googling this for days, and while there is information to be found, I can't seem to get any of it to work for me (I'm a complete novice at this type of stuff and everything I've accomplished so far has been through blind luck). It all seems to be for ethernet/wifi shields and I'm not using those or any additional libraries.

After a solid week of trial and error, I finally got my arduino pro mini/8266 combo sending email/sms alerts and I'm super happy. It is all done through AT commands. I would like to add a function that get's the IP address and stores it into a variable so I don't have to do it manually in case the IP gets changed for some reason. I know I can get the IP address with the command AT+CIFSR. I know I can get the arduino to look at the response with Serial.find(), but I don't know if that can somehow be used to store info into a variable.

Any help or direction would be appreciated.
