I want to find the surname as a variable but idk where it is?

I am following an example and want to know what I can run in order to assign the last name read off a swipecard as string into a variable so I can then use that to only allow cards with a certain surname or identifier, etc. I am not really into programming and am not sure how to do this as I just wanna make something for fun for my house and idk what to do. Help is appreciated <3

If you uncomment that line that says "uncomment this to see all blocks in hex" where does the surname show up in the data?
