I just started teaching an Arduino class for the first time and it's going pretty well. My biggest difficulty is really just trying to read code in the IDE while projecting it on the wall. It would be really helpful if there was an easy way to switch to a high contrast theme with big text. I'm teaching in Haiti and even with fabric over the windows, it is hard to get the room 'dark'.
Is there something I can change in the IDE right now to implement this? And is it easy to change back to 'normal' for when I'm not projecting?

I'm putting together info that should completely cover Keyword Color and Theme setup details useful for: High contrast printing, Dark Theme, Vision enhancement and/or just to enjoy some expressive Eye-Candy!
To test several combinations of White / Dark Themes (and IDE versions), I download different versions or make various copies of the entire Arduino PROGRAM folder. Each one is set to its own color theme and then I use a separate RENAMED "Pin to Taskbar" link to launch EACH desired Arduino.exe with one click! (using Win Vista - I also change the Icon)
You could duplicate yours, and then name one of them "Normal", and the other one, "High Contrast" or, "Projection". Since they will still share the same Sketch folder, the effective result (to launch EACH desired Arduino.exe with one click) accomplishes exactly what you are asking for!
Just be careful when opening up a previously saved Sketch that might have been saved from the other program...
I suggest going up one level within the OPEN dialog box to make sure you are really loading the latest
saved copy if you are working with multiple-named Sketches or incrementally saving versions of your Sketches.
