Looking at this TC board which can take 4 TCs,

if I only use 2 MAX31850K, it won’t matter where I populate them in the board, correct. They all connect via OneWire.
The data sheet shows 4 pins on the chips you can use (I think) to set its address. But they are not populated on the pcb.
It won’t matter for me as I’m only using 2 TCs, but if you were using all four on that board, which is made for 2 TCs on top and 2 on bottom, how would you tell which is which?
I guess there’s a part of OneWire I don’t understand, obviously. If 4 thermocouple sensors are connected via one wire, would you just have to trail and error to see where each one was?
