which cable are you planning on making so long? The connection between the load cell and the HX711 amplifier or between the HX711 and the ESP32? The connection between the load cell and the amplifier is a very small, analog signal (very sensitive to noise). The one between the the HX711 and the arduino is digital (less sensitive).

but could still cause noise. If so, shielding is good. It is usually easy to get some LAN cable (Cat 5 or Cat 6) that is shielded and has twisted pairs. For each pair, match the data line with GND.

You can certainly try before going to that extra work.
