I'm a buy stuff figure out what to build late type of guy

Super dumb question. I'm initially bought an Uno R3 education kit and qucikly got the excited and addicted to the possibities of what I could possibly create. After a night of drinking and Amazoning "shoot first ask questions about what I'm actually going to build " later I soon found myself with the list of packages at my door. I guess my question to you guys is, what the hell should I try to to build with all this stuff I bought on a whim?

I had dreams of buidling a Lego RC car, a RC helecopter, some type of SDR powerered dog collar to track my dog (I know super dumb). I built the obligatory Retro Pi and got bored in about 10 minutes.

I even ordered a customer printed PCB from JLC PCB to build some custom controller for an ardruino powered RC car. (based of this video https://www.youtube.com/watch?v=tzNROquPEHQ&t=16s) God knows if I was able to properly folow the directions and upload one of the two provided gerber files from the tutorial.

I think I have a disease. It's the "I think I can learn just by buying stuff disease". Please give me specific instructions or ideas to build and learn with the massive list of stuff most of which I don't know much about other than going thorugh the basic skethces in the ardruino IDE and a little Fritzing here and there.

I have a problem with my eyes I cannot see what you purchased or what your resources and skill set is so I cannot make any suggestions. The previous post should give you a lot of ideas if you have the parts.
