BluetoothSerial uses Bluetooth Classic. ESP32S3 does not support Classic, only BLE.

Take a look at ESP32_BleSerial.

I could reproduce your problem. Next I compiled one of the BluetoothSerial examples for the ESP32S3 and got the following error

#error Serial Bluetooth not available or not enabled. It is only available for the ESP32 chip.
