My project is to be able to test the metallurgical difference between normal (or carbon) steel, versus stainless steel. I want to connect the IM5141 sensor to an Arduino board to be able to process the data.

Its got a standard 20mA current output, so with a burden resistor of 220 ohms you'll get 0.88--4.4V output range.
So common the grounds, connect the output of the sensor to a 220 ohm resistor to ground and a 10k
resistor to one of the arduino analog inputs (the 10k is to protect the arduino should the voltage exceed 5V)

What type of stainless steel? Some is magnetic, some not so much and some not all?
Well it will definitely be able to tell you which sort which is the aim of the device!
I think the trickiest thing is ensure equivalent geometry and temperature for each measurement, the datasheet
implies the difference between mild and stainless is only a factor of 0.7 or so. It not clear
how important ferromagnetism v. eddy currents is to the sensor, nor how thick a sample needs
to be before thickness no longer affects the reading, but I guess that'll all come from experiment.
