Hi for all i made 2 source code for controling ( relay ,Led , servo motors ) & nother for get data from sensors ( DHT11 , MQ2, Ultrasonic ..etc) using arduino Uno+ ethernet shield over web page
but i want to make application with .exe extension like interface graphic for controling & monitoring sensors data ( graphs ) in same time
whitch software i must use for do it !! 
To make a program on the computer you don't use Arduino. Use your favorite programming language. Processing is a form of Java that is pretty easy and linked to Arduino project. Python is a good one. C++ or C# would work as would Java. Which one do you know how to use? That's the one you go with.
im not good in programming there is tutorials about make interface using visual studio , Lab view , VB lab arduino ..etc also all project scada need interface so can i make that with visual studio ?? and make the project .exe for install in windows ??

Try writing that again, only this time imagine that you are talking to a grown up pro programmer and not texting to your boyfriend and see if you can make it something that makes sense. Sentence structure, punctuation, capital letters, and all that other context stuff that helps a reader figure out what the heck you're talking about. Because I'm not getting much out of this other than that you don't think you're good at programming.

Well the compiler cares a lot more about syntax and punctuation even than I do. So let's see how you get along with that if you're too lazy to put in enough effort to make a reasonable sentence.
I'll go help someone else and I guess you can wait for someone who speaks this new ignorant-teenager-too-lazy-to-be-bothered-with-language language.

OK. What you are saying is slightly less coherent than the average American but some intent is evident. As stated above, this is not the place for writing .exe programmes, Arduino is not for that purpose. But, before you go rushing off, have a look this, which might save you from re-inventing the wheel.
