So it was the regulator or maybe how it was being used.
The L200 and 7805 regulators are very long in the tooth and there are better ones available now, but even the ones used are OK if you stick to the rules - read and implement the data sheets.
By all means use clones of the Arduinos and make your own power supplies, but it often pays to start with some genuine stuff to establish that everything works, then tinker with cheaper items.
A decent bench power supply and a PC based scope can save a lot of wasted time and expense in the long run.
