Can you test your communication from the Mega to a PC? So you can see if it is the SD the bottleneck?
NodeMCU sould have too an analog port but maybe it's better a MEMS MIC connected to the NodeMCU. The ESP32 should be better because there are two core so one can record sound and the other can transit over WiFi.
How do you think I can connect the microphone to esp 8266, sir?
