Issues with Reading AC Voltage from Parallel Piezo Electric Elements

If you plan to put them in parallel, then you must measure DC polarity of the disks.
Put a single piezo disk on something that supports the edge, like a 1" rubber O-ring.
Hold the black lead of a DMM (set to 2volt DC) on the brass edge, and press the red lead gently in the middle of the white piezo part. You will see the voltage go positive or negative when pressed.
If you have trouble seeing it, then add a 100n cap across the DMM leads.
Select the disks for positive or negative going voltage when pressed.

Still don't see how you are going to charge a battery with that.

To detect steps, a force sensitive resistors or capacitive sensors are much easier to work with and can take considerable abuse.

There are commerical products, or make one with velostat (conductive plastic sheet) or conductive foam (used on the leads of ICs to protect them from static charges).

Sandwich the material between sheets of foil, or PCB material like this.
