I see many people selling the arduino joystick on eBay.

You can press the joystick down in the Z-axis for a digital output, and also push the joystick in any direction for an analog output.

Is there a joystick that also allows the joystick to be turned like a volume potentiometer? This would be another output, analog or digital I'm not sure.

You can use a normal 2 axis Joystick from a Wii Nunchuk. Like I said its only 2 axis tho. But you get a 3 axis gyro and 2 Digital buttons and a 2 axis Joystick.
