K-Type Thermocouples for Arduino

Good Afternoon,

I am attempting to measure the temperature of several different chambers which require K-type Thermocouples. I have done a bit of research into them but I am failing to find two things, the exact response times for different K-type variations and the max amount of thermocouples that I can fit on one Arduino Uno. Any help or pages of reference would be greatly appreciated!

You need a thermocouple amplifier. The response time is determined by how fast the data can be read out of it.
