Large industrial oven

Hey all,
This is my first big project with an Arduino so I'm looking for a bit of help. I've made a few ovens in the past but never on the scale or level of control that I'm aiming for on this one.

I'm planning an oven that's approximately 20 feet long and 8 inches in circumference (it's a pipe that sits inside of an insulated box. What I need help with is finding a switch that can be connected to a 120v, 250 watt strip heater like this one: http://www.omega.com/pptst/HCS_Heater.html

The oven will operate from between 300 and 600 degrees, so the plan is to have a system of fans circulating through the tube.

Does anyone have an switch recommendations? In the past I've just had ovens connected to a power supply that had built in controls. I am building it so I can vary the temperature throughout the cooking process. So I can start low, work my way higher over the course of the cook. Any help would be hugely appreciated.

Sounds like you need a Solid State Relay. Shouldn't be hard to find an SSR that will take a 5V signal from an Arduino to switch a 120V 3A (360W) circuit.
