I am looking for assistance in writing some codes for my boat project. The idea is having all parameters i.e rpm, coolant temp, oil pressure, tank level i.e fuel, water, black and grey water etc recorded in excel, and having a gauge dashboard in excel sheet as well.

Interesting project. Why is Excel the target for dashboard information though?

What kind of boat is this for? I wouldn't expect a small vessel to be having a windows machine on all the time to collect and display data.
