Some 1 and 2-wire, oil pressure/water temp/etc. All 5v from the ECU.
I would presume to power it via USB adapter, but I'm unsure how to read something, or if it will read accurately, from a different power supply. Can I read them directly or do I need helper boards? (Like.. I found the MAX471 via google).
This could cause problems if the sensors are connected to the ECU while you are testing. You might look at the manuals for the particular car or the data sheets for the sensors. You need to break this down, as to what sensors, and what you are expecting as a signal from them. If it is in a CAR then the make etc of the car. At his point I do not have a clue as to what I am looking at and cannot even give you a SWAG. Please realize if you change any of the wiring even just connecting to it you would void the warranties and we in no way would be responsible.
