I'm wondering how you would get Arduino to sense that you touch a can of soda or eg. foil without using the MPR121! Any ideas? A schematic would me nice, and a good explanation!

I have given you the answer, that technique works with an Arduino equally as well as a MPR121.

Why did you not say so at the beginning?
You need something with a much higher gain, I have used a CD4011 nand gate. Put one input to 5V, the other input to a 6M8 pull down resistor.
Alternatively use a proper capacitave sensor like this :-
