My project is to design and build a variable speed drive for a three-phase motor with the following characteristics: 380V, 0.6A, 50Hz, 250W and 1360rpm. So I need to make an inverter controlled by Arduino, is the MOSFET a good choice for the inverter? and if so, what is the reference I have to buy ?

Mosfets are fine for lower voltages, IGBT’s are the device of choice for mains voltage inverters. Since this is a school project, you need to do the work.
Your first assignment: 380 vac supply. What will your dc bus voltage be?
380volt AC is lethal. You shouldn't even ask building the hardware for that on a forum.
This needs proper one-on-one teaching by someone with experience.
What's wrong with the schooling system.
I think all we should do here is guide you with the software.

Yes it is true, the Fan motor has characteristics that are difficult to manipulate...

A ready-made solution could be safer/cheaper.
You can find 380volt VFDs from ~US100 on ebay.

380volt VFD way better way to go Wawa is right you should buy one.
There lot more to this then you think.
lots of part's and your first try more then likely go up in smoke.
Maybe even 4 or 5 try's up in smoke.
Normally i love to dream about solutions but this one is a no starter.
Home made Inverters at 380v are dangerious, add 3 phases, well you do the maths. Then on top of that feed it into a motor that will run 1500 rpm where the phases could go out of sync.
Sorry this is not a project to learn on and if this is a school project and you come here you need to go back and do the theory again.

You can find that block diagram in every ac drive manufacturers literature, it’s been the standard configuration for thirty plus years in industry and there are billions in exsistance. More importantly, there is a huge amount of knowledge and information absent between a block diagram and a functional drive.
I am in total agreement with Leo as you are dealing with absolutely lethal voltages and there are no valid reasons to do so from an educational perspective. Perhaps if you are doing your final year or graduate work in power electronics but you could learn all the same concepts using 24 volts dc.

You need to do a lot of reading up and build it then.
Come back and ask more when you no what you need draw the whole circuit.
The blocks in the link you posted are just a idea to make this happen you need to fill them in with a circuit.

Thank you so much, i will do a lot of researches and i think with the help of some good professors i will get a good results !
And be extremely careful. 380V AC, so when rectified that'd be about 540V DC, right? A recipe for sparks, smoke and possibly explosions.

I'm surprise that by final year you have not been taught the basics of VSD and switching components, as well as the difference between a fan type load and a full torque starting load.
You haven't even put what your DC bus voltage will be.
If I was you I would be using the facilities and resources of your educational institution, using the major source of your knowledge.
By asking your lecturers/ tutors/ instructors questions you will show them your commitment.

used 6 pcs mosfets, do they all same as N channel or 3 N / 3P?

NMOS and PMOS have different symbols. This circuit uses 6x NMOS.
