I was just wondering if anyone could advise me on what time of sensor would be best for Measuring Volume of Liquid in Glass by weight that would be tidy enough to then fit into a coaster ?

Their is no sensor that will simply do that.
You have to make other measurements, like weigh the glass and contents and subtract the weight of an empty glass, but I suspect that is not what you want to happen.
What do you want to achieve with your project and why?

Maybe do-able?
If you know what the glasses weigh (which may not be very tolerant/repeatable!) and know the drink that is in them, you can easily use say a FSR to form a calibration curve.
Maybe you have different glasses? Is it a bar? Coffee shop?
Maybe an RFID sticker/tab under the glass can then be used to ID the glass type and drink that is meant to be in it to then select the appropriate LUT/Calibration curve/equation.
