I am an Italian guitarist and I would like to create a MIDI foot controller (just over USB) and composed by 8 momentary switch NO and 2 pots (1 linear for expression pedal and 1 exponetial for volume).
Almost all the guides I've found on the net using a physical midi connector but I saw that other people send the data serially via USB cable and convert them into MIDI signals through a software as MIDI Joke.
The problem is that I did not understand:
the data is sent through the standard Arduino USB cable? If yes, how should i set the connection(in the software too)?

I don't understand this question. The same serial cable is used to send data from the Arduino as is used to send data (upload a hex file) to the Arduino.
So, surely, you have figured out which end connects to the Arduino, and where. That only leaves one end, and that end must connect to the PC, somewhere. I'm willing to wager the price of a cup of Java that you can figure out where and which side needs to be up (or on the right).

Do you really need to be asked which software? Firefox can't read from the serial port, so its pointless to talk about how to configure it to do that.
