MPU6050, I dont understand how to alter sensitivity

No, If you write 0x11, that is the same as 0b 0001 0001 so you would be setting bit 4 and bit 0.

       bit: 7 6 5 4 3 2 1 = register at 0x1C
AFS_SEL =         x x 
so
AFS_SEL = 3 would be 
       bit: 7 6 5 4 3 2 1 = register at 0x1C
AFS_SEL =         1 1

which is 0b 0001 1000 = 0x18 (hex)
