Multiple temperature sensing w data logging

Looking to set up long-term internal temperature monitoring inside a commercial bee-hive. Probably would want to deploy at least six temp sensors, and log readings (e.g. on SD card) hourly over a period of months with minimal maintenance. I have yet to do substantial research on the various Arduino boards and capabilities, but looking for recommendation on which board or kit would best suit. Longer term might want to add other sensors (e.g. humidity) and possibly transmit data via phone.

You are likely to run out of memory before you run out of pins, so you might as well get a Mega to start with. When you have a clear purpose in mind, a kit is probably a mistake, and a plain-vanilla Mega will suffice. The Arduino usage is pretty common and you will be well-supported here. Your substantial research might be better employed looking at remote power supply.
