Music instrument project

Hello there guys,

I have a project that i'm currently working and i need your guidance. I want to build some sort of music instrument that uses water beams. When you put your hand into one or more beams it has to make some sounds. I was thinking that if i use a IR sensor for distance measurement i would be able to create this music instrument, but i don't really know if it will interact with the water beam and send me some wired values. Should i be using some other sensors like a laser one or ultrasonic ? What do you guys think ?

It looks like they have a light beam for each stream shining down from above, there would be light sensors in the base of the unit for each beam.
The fluorescent bit is just stuff they put in the water that drips from holes that the beam shines through.

So, what you say it's that they have a light source for every beam and a light sensor that detects the amount of light and when someone puts his hand in the light the sensor detects it. My concerns are about the water beams. Will they interfere with the light sensor causing it to give random values ?

I'd say by the strength of the light beams I don't think it would be a problem, the beam appears to be wider than the drops.
