N-Type Thermocouple and AD595?

I need to read in temperature data from 0-1000 C on 8 N-Type thermocouples. I cannot change the type of thermocouple that I'm using. I've used the AD595 in the past for k-type and it does the job just fine. But I'm having a hard time figuring out how to offset and change the gain on this guy? Any help? Is there something out there that would do a better job with an N-Type thermocouple?

From wikipedia on N-type: "Sensitivity is about 39 µV/°C at 900 °C, slightly lower compared to type K"

From AD595 datasheet, K-type sensitivity is "40.44 µV/°C". So a correction of about 3.5% is needed. However the response of all thermocouples is non-linear so a correction curve/mapping is needed really. If you use the formula in the 595 datasheet for calculating the thermocouple voltage from the output voltage, then use that to determine the N-type temperature from an interpolated table or equation for N-types that would work.

Or use the new version of the chip, the MAX31855.
