Need Guidance for A/D conversion of multiple sensors with Ardiuno Leonardo

This is my first time using an Arduino. I'm having trouble in figuring out if I can do Analog to Digital conversion of multiple sensors on Arduino Leonardo. I have a temperature sensor (One Wire Digital Temperature Sensor - DS18B20), a pulse sensor amp (analog), and a GSR sensor (This is built by me). I'm having trouble trying to figure out how to A/D conversion is going to work for multiple sensors (I was thinking of doing it one at a time, but I do not know how to implement it). Is Arduino Leonardo capable to doing A/D conversion for more than one sensor? or do I need to use a different microcontroller? Assistance in this matter is greatly appreciated.

If you look at the specifications (http://arduino.cc/en/Main/ArduinoBoardLeonardo) you will see that the Arduino Leonardo has TWELVE analog inputs (A6 - A11 are on digital pins 4, 6, 8, 9, 10, and 12). You might also notice that the DS18B20 doesn't use an analog input pin since it is a OneWire device.
