First of all, I don't have much knowledge about this, but want to build something that tracks temperature on the surface of an object and keep it in certain temperature with 220v. What's most ideal method to achieve this?

Ask people being experienced working with mains.
There are relays, SSD (Solid State Device) that can be used.
Start with the temperature measuring part of the project.
Why is just the "surface" temperature important? What is the material?

What is the "surface"? What is its emissivity? A non-contact sensor like the MLX90614 sensor might be a good fit.
Want to use carbon fiber to heat treat a mold.
I would like to see an example of that! Most people use induction heating.
