Need help with programming greenhouse ventilation manual mode with knobs.

This is working good but i need manually drive windows sometime. I want to add 3 position tumbler switch for win 1 and win 2. Position 1 open window 1, position 2 close window 1 and window 2 same. How to program this ? I use Arduino Nano. Mega is too overkill.
