I have a project that needs to be completed very quickly.
It is a data logger that writes the data from two separate rs-485 channels, a temperature sensor and also records if a 12vdc signal is present. Real time clock with a sd card will be used for recording and time stamp.

Unless you really have a lot of data to record, I'd use an ESP8266 using its internal Flash (up to 3 MB of storage) instead of an external flash. Best if there's WiFi available at the location as you don't need the RTC (get the time from NTP), and you can download the data logs through a simple web interface instead of removing the SD card.
