AFAIK, the ethernet functions do not use interrupts, and as long as the LED doesn't use the SPI, you could set up an interrupt function to blink the LED. However, I don't know if I would go to all that effort and program/SRAM memory to play "La Cucaracha" while waiting, if you know what I mean.
