Not sure which sensor/electronics to buy

Hey,

I am making a project of a pillow which would detect when we move our heads on pillow. The general idea is that when the person STOPS moving on the pillow, the program starts counting.

The thing is though I don't know what sensor/electronics should I buy for this?

3-Axis Accelerometer? PIR sensor? Any idea?
