Over-Voltage and Over-Current protection circuit

I have huge security project that i have been working on for sometime but i have a little bit of problem now is that i have some peripherals that is outside the room door like LCD and keypad and i have been searching the internet to find a way to protect from any sabotage act against the project through outside wiring of the lcd and keypad so i found this article here which looks promising but i not sure if doing this for each wire to the keypad and lcd i2c and vcc will protect it? also can i add very low rating fuse to protect from over current too? I am really newb when it comes to electronic components so i was seeking forum professionals to help me out with this important situation.

The Ruggeduino might be close to what you need, if I remember correctly, comes with industrial level
protection on the pins I think. You might need to decide on your threat model though, protection costs
more if the expected voltages are higher!
