I am trying to figure out which parts I would need to put a load cell sensor at one end of a 2 ton bottle jack for a press.

I think that will crush the load cell sensor the first time you try it.

Start with a 4-ton (about 4000 Kg) load cell. You can get them for under $100 from Alibaba.com.
