piezoelectric sensor connected to arduino

good day. i have a study about car accident detection and im using piezoelectric sensor connected to arduino but my problem is what is the minimum pressure applied to the sensor? this will activate my GSM and GPS module to generate an output. can i adjust the sensitivity of the program and what is the minimum sensitivity to be indicated?

can i adjust the sensitivity of the program

Yes.

what is the minimum sensitivity to be indicated?

You need to do a bunch of testing as well as defining your requirements better. How do you differentiate between an accident and a rough road? What frequencies from the sensor are important? What axis(s) do you want to monitor for your signal? Not properly analyzing the data can result in all sorts of problems. The one that first comes to mind is the old lady in the crosswalk and the idiot driver ... https://www.youtube.com/watch?v=vPIYXpxjL1w
