Good afternoon! I am working on a project where I have connected an OV7670 camera module to my Arduino without a Nano. I am using indrekluuk's GitHub code (GitHub - indrekluuk/LiveOV7670: A step-by-step guide to building the circuit for this project:) to boot the camera and it works as intended.
My question is how would I be able to read/get the color values of each pixel or the average value of the full frame? Thanks so much!

So sorry! I meant an OV7670 camera mod, my mistake. There were two ways to connect the camera for input: one with directly connecting the camera to an Arduino, and one with connecting the camera to an Arduino Nano. I connected it directly to the Arduino.

Would it be correct to say that all you're going to get out of the camera is a JPEG?
It's a constant update, not just a still image. To answer your question, I'm going to say no, I don't believe so. Attached is a screenshot of the display.
